Atlantic Battered Cod

Ingredients

  • 1/2 c. flour
  • 1/2 c. Panko bread crumb
  • 1/4 c. cornstarch
  • 1 t. baking powder
  • 1 t. salt
  • 1/2 c. water
  • 1/4 c. flour
  • 1 lb. Cod (2” pieces)
  • 3 c. sunflower oil (conala oil)

Preparation

Step 1

For cod, mix dry ingredients and whisk in water. Heat oil in a sauce pot. Dredge fish in flour, then batter. Fry in oil for about 7 minutes or until golden brown.
