Puffed Potatoes with Cheese

This may be prepared in advance and refrigerated!!

Ingredients

  • 1 lg onion, minced
  • 1 TBSP margarine
  • 8 medium boiling potatoes, peeled, cokked, drained, mashed
  • 1/3 c margarine
  • 1 1/2 Cheese Whiz
  • 3/4 c milk
  • s & p
  • 2 eggs, beaten

Preparation

Step 1

sautee onion in 1 TBSP marg til translucent and tender
combine mashed potatoes with remaining marg, cheese, milk, s&p, and cooked onion.
place over low heat and stir until cheese and marg are melted
fold in beaten eggs
turn into greased 2 qt cass or souffle dish
bake at 375 for 45 mins or until potatoes are puffed and brown
