Ingredients
- 4 salmon fillets
- 2 tbsp. olive oil
- 3 tbsp.chopped pecans
- 1/4 cup dark brown sugar
- 4 tbsp. butter
- 2 tbsp. bourban or apple juice
- Salt and pepper to taste
Preparation
Step 1
1. Preheat oven to 425 deg.
2. In a small saucepan, brown pecans lightly
3. Add brown sugar,butter,bourbon or juice; heat til simmering...set aside
4. In an ovenproof skillet heat olive oil on medium
5. Add salmon skin side down,sear 2 minutes
6. Put skillet in oven and bake for 5 minutes
7. Remove skillet;spoon glaze over salmon,return to oven
8. Bake for 3-5 minutes or til the salmon flakes easily with fork
9. Turn oven off,leave salmon in oven an additional 2 minutes
