Cauliflower Salad

Ingredients

  • 1 head of cauliflower
  • 4-5 green onions, chopped
  • 1/2 cup pimiento-stuffed olives, chopped
  • freshly ground black pepper
  • 3/4 cup mayonnaise (I use Hellmann's Light)
  • Splash lemon juice

Preparation

Step 1

1. Separate cauliflower head into flowerlets, cutting larger ones into approximately 1" bite size piece for a uniform look.

2. Place cauliflower pieces in a bowl, pour lemon juice all over. Add onion, olives, and mix.

3. Fold in mayonnaise.

4. Grind black pepper over all, then gently fold and allow to refrigerate at least 4-6 hours.
