Asparagus And Roasted Red Pepper Salad

Ingredients

  • 2 cups steamed sliced fresh asparagus
  • 1/2 cup diced roasted red pepper
  • 1/2 cup sliced artichoke hearts
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon minced fresh dill
  • 1 tablespoon minced fresh Italian parsley

Preparation

Step 1

Combine the asparagus, red pepper, and artichoke hearts in a salad bowl.

Whisk together the remaining ingredients to make the dressing and pour over the salad. Chill and serve cold.
