Meatloaf with mushroom sauce

One of the best meatloaves I have ever made. Makes 2 loaves and very tasty.
Ingredients
- Mushroom Sauce:
- 2 lbs ground beef
- 3 c fresh mushrooms, chopped
- 1 pkg (1.4 oz) dry vegetable soup mix Knorr
- 1/2 c seasoned dry bread crumbs
- 1/2 c milk
- 1 egg, slightly beaten
- 1/4 c milk
- 2 T cornstarch
- 2 T butter
- 3 c mushrooms, sliced
- 1/3 c chopped onion
- 1 14 oz can beef broth
Preparation
Step 1
Preheat oven to 350. In a large bowl combine beef, mushrooms, soup mix, bread crumbs, milk and egg until well blended. Form into two loaves, 7 x 5 inches each. Place loaves in a shallow dish and bake for 1-1 1/2 hours until no longer pink in the middle.
For the sauce in a small bowl combine milk and cornstarch set aside. In a large skillet, melt the butter over high heat. Add the onion and mushrooms, cook over moderate heat until mushrooms are golden about l0 minutes. Stir in the beef broth and 1/2 c water, bring to a boil. Stir cornstarch mixture into the mushroom mixture in skillet. Cook over high heat, stirring constantly, until slightly thickened about 1 minutes. Serve sauce over slices of meatloaf.
