ZUCCHINI CORNBREAD CASSEROLE

Ingredients

  • 4 C shredded zucchini
  • 1 onion, diced
  • 2 eggs, beaten
  • 1 (8.5 oz) package of dry corn muffin mix
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz low-fat Cheddar cheese, shredded

Preparation

Step 1

Preheat oven to 350*. Grease 2-qt casserole dish.

In a large mixing bowl combine zucchini, onion, eggs, muffin mix, salt and pepper. Stir in half of the shredded cheese.
Spread this mixture into casserole dish.
Top with remaining cheese.
Bake for 60 minutes.
