Carrot Cake

Ingredients

  • Icing:
  • 2 cups flour
  • 2 cups sugar
  • 2 tsp bkg soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 cup oil
  • 4 eggs,
  • 3 cups shredded carrots
  • 1 tsp vanilla
  • 1 cup nuts
  • 4 oz crushed pineapple, drained
  • 1/4 cup soft butter
  • 1 lb confec sugar
  • 8 oz soft cream cheese
  • 1 tsp van
  • 1 cup nuts, chopped
  • 4 oz crushed pineapple, drained

Preparation

Step 1

Sift all dry ingredients together, add oil and eggs one at a time. Blend well. Add carrots vanilla, nuts, and half of pineapple. Mix well. Pour into greased and floured 9 x 13 pan. Bake 45 min in preheated 350° oven.

Mix icing ingredients well and frost cake after cooling.
