Roasted Garlic Mushrooms

Ingredients

  • 16 Even sized open cup mushrooms, stalks cut level
  • 3 tbl vegetable oil
  • 1/4 cup unsalted butter
  • 3 cloves garlic chopped fine
  • 2 tbsp fresh thyme
  • 1 1/2 lemon juice
  • s&p
  • 1/4 cup Breadcrumbs

Preparation

Step 1

Preheat oven to 400 degrees. Lightly fry the mushrooms cap side down in oil for 20 seconds.
Arrange the mushrooms in a shallow roasting pan with stalks facing upward.

Mix together the butter, garlic, thyme, lemon juice and seasoning. spoon a little of the mixture into each mushroom then lightly press breadcrumbs on top. Either refrigerate or cook immediately for 10 minutes.
