Ingredients
- 1 stick butter
- 2 cups sugar
- 2 eggs
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 tsp salt
- 15 oz whole milk ricotta cheese
- 3 T fresh lemon juice
- 1 lemon zested
- Glaze/
- 1 1/2 cup powdered sugar
- 3 T lemon juice
- 1 lemon zested
Preparation
Step 1
Cream together butter & sugar. Beat in eggs. Combine dry ingredients & mix in. Fold in ricotta, lemon juice & zest from 1 lemon. Bake 10 minutes @375.
For glaze, combine powdered sugar, lemon juice & zest of 1 lemon. Drizzle over cooled cookies.
