Bulk Chorizo Filling

Ingredients

  • 1 large onion, finely copped
  • 1 lb. lean ground beef
  • 1/2 lb. lean groung pork
  • 2 tsp. each; chili powder & oregano leaves, crumbled
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1 tsp. salt
  • 1/2 tsp. liquid hot pepper seasong (opt.)
  • 5 Tbsp. vinegar
  • 1 1/2 cups canned enchilada sauce

Preparation

Step 1

Combine onion, ground beef, ground pork, chili powder, oregano, cumin, cinnamon, salt, hot pepper seasing and vinegar.

In a wide frying pan over medium-high heat, brown meat mixture lightly, breaking it apart as it cooks. Add enchilada sauce and boil rapidly, uncovered, until liquid is gone. Skim off accumulated fat.
