Twice Baked Potatoes

Ingredients

  • 4 medium (7 oz.) baking potatoes
  • 1/2 C sour cream
  • 3 oz cream cheese softened
  • 2 T butter or margarine
  • 1 tsp onion salt
  • 1 tsp dried or frozen chives
  • 1/8 tsp pepper
  • paprika
  • parsely flakes

Preparation

Step 1

1. Pierce skins of potatoes and bake in microwave or oven until done
2. Cut potatoes in half and carefully scoop out the pulp into a bowl, leaving 1/4 inch for shell
3. Add the rest of the ingredients except the paprika and parsely and beat until smooth; spoon back into the shells; garnish with paprika and/or parsely as desired
4. Microwave or heat in oven until hot (350° 30 - 45 min. if they have been refrigerated)
5. May be made a day ahead and refrigerated until ready to heat or may be frozen for longer storage.
