Black Bean and Chorizo Tortas

Ingredients

  • 8 oz fresh chorizo, with casing removed
  • 4 T olive oil
  • 28 oz black beans
  • sa;t
  • 4 sub sandwich rolls
  • 6 oz goat cheese, sliced 1/4 in thick
  • 1 ripe avacado, sliced 1/4 in thick
  • hot sauce

Preparation

Step 1

Brown chorizo in lg skillet over med heat, 10 min. Break into chunks as it cooks. Add 1-2 T oil and beans. Bring to simmer. As beans simmer, mash them with the back of a lg spoon to create chunky paste. Simmer 10 min, turn to lowest heat to keep warm. Place another skillet over med heat. Slice open rolls and remove some bread to create a hollow. Brush with oil then grill, cut side down, til golden brown. Assemble tortas by smearing bean mix on bottom og roll, top with cheese and avacado, add hot sauce. Serve immediately.
