Ingredients
- 10 lbs. fresh ground pork (ask for lean)
- 1/2 cup ground fennel seed
- 1/2 tsp. salt
- 1/2 cup grated Parmesan cheese
- 2 cups wine - red
- 1 cup water (judge for moisture)
- 3 1/2 tsp. black pepper
- 1/2 tsp. red pepper flakes
- 1 cup chopped fresh parsley
- 2 tsp. garlic powder
Preparation
Step 1
Mix all ingredients well. Use hog casings to put sausage in.
