Potato Soup

Ingredients

  • 8 slices bacon
  • 1 cup diced yellow onion
  • 2/3 cup flour
  • 6 cups chicken broth
  • 4 cups diced peeled potatoes
  • 2 cups heavy cream
  • 1/4 cup parsley
  • 1 1/2 tsp garlic
  • 1 1/2 tsp basil
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1 cup cheddar cheese

Preparation

Step 1

Fry bacon. Save grease.
Cook onions in bacon grease.
Add flour and whisk. Cook 4 min.
Add chicken broth, slowly whisking.
Reduce to a simmer
Add potatoes, cream, bacon, garlic, basil, salt & pepper.
Simmer 10 min. DO NOT BOIL.
Add cheese until melted or sprinkle on top of soup.
