Beef and Vegetable Soup (skinny)

Ingredients

  • 1 lb lean ground beef
  • 1/2 c chopped onion
  • 1 bottle (12oz) beer
  • 1 can fat free beef broth
  • 1 1/2 c sliced fresh carrots
  • 1 1/4 c water
  • 1 c chopped peeled turnip
  • 1/2 c sliced celery
  • 1 can (4oz)mushroom stems and pieces, drained
  • 1 t salt
  • 1 t pepper
  • 1 bay leaf
  • 1/8 t ground allspice

Preparation

Step 1

In a large skillet, cook beef and onion over med heat until meat is done. Drain. Transfer a slow cooker. Stir in the remaining ingredients and cool on low for 8 hrs or until heated through. Discard bay leaf.
