Cherry PB Balls

Ingredients

  • 1/2 c. butter, softened
  • 1 c. PB
  • 1 tsp. vanilla
  • 2 c. powdered sugar
  • 24-26 maraschino cherries w/ stems
  • 2 c. semisweet choc. chips
  • 1/4 c. shortening

Preparation

Step 1

In small bowl, beat the butter and PB till smooth. Beat in vanilla. Gradually add the powdered sugar and mix well. Cover and refrigerate at least 1 hr.

Pat cherries dry w/ paper towel. Dust hands w/ additional powdered sugar. Wrap each cherry w/ rounded tbsp. full of PB mixture; shape into ball. (PB mix may need to be refrigerated occasionally while rolling) Cover and refrigerate at least 1 hr.

In microwave, melt choc. chips and shortening; stir till smooth. Dip PB balls in chocolate; allow excess to drip off. Place on waxed paper. Refrigerate at least 1 hour or till set.
