Gluten-Free Buttermilk Cornmeal Waffles

Crisp, but tender waffles, full of rich flavor.

Ingredients

  • 3/4 cup sweet white rice flour
  • 1/2 cup brown rice flour
  • 1/2 cup tapioca flour
  • 1/2 cup corn meal
  • 3/4 tsp sea salt
  • 3/4 tsp baking powder
  • 3/5 tsp baking soda
  • 1/4 tsp xanthan gum
  • 3 Tbs sugar
  • 2 large eggs
  • 1 1/2 cups buttermilk
  • 1/2 cup warm water
  • 3 Tbs melted butter
  • 2 Tbs honey
  • 1 tsp vanilla

Preparation

Step 1

Mix together all dry ingredients with a whisk in a large bowl. Add the wet ingredients and mix well until smooth.
Cook in your waffle iron according to manufactures instructions. Mine took about 8 minutes each.
Serve with your choice of toppings.
