Ingredients
- 4 medium potatoes
- 3 cups flour
- 1 egg

Peel, cut, and boil potatoes until you can pierce them easily with a fork, but don't overcook. Drain and put into a mixing bowl. Add the egg and whip until fluffy. Add the flour. Turn onto a floured board and knead dough by hand until smooth, adding more flour if necessary to prevent sticking and forming into a bowl. Take a small handful of dough and roll it into a long rope by hand. Cut the rope into inch-long pieces, and then flatten each piece slightly. With fork, gently dent the center of each piece. Drop into lots of boiling water and cook for 8-10 minutes. When they float, they are ready.
