Rockin' Restaurant Spinach Dip

Ingredients

  • 2 Tbsp. minced shallots
  • 1 tsp. minced garlic
  • 4 oz. chunk cheese (any kind)
  • 2 Tbs. milk
  • 1/3 c & 2 tsp. mayonnaise
  • 1/4 c. sour cream
  • 3 Tbsp. & 1 tsp. grated Parmesan cheese
  • 1 pkg. (10 oz.) frozen chopped spinach,thawed and drained
  • 4 oz. drained canned sliced water chestnuts,1/2c. chopped
  • Salt and pepper to taste

Preparation

Step 1

Preheat oven to 325F
Coat pot with cooking spray;heat over med.-low.
Add shallots and garlic;cook,stirring until softened,1-2 mins.
Add chunk cheese and milk;over low heat cook,stirring until melted.
Stir in mayo.,sour cream and 3 Tbsp. topping.
Stir in spinach and water chestnuts.
Season with salt and pepper.
Spread in 2c. baking dish;sprinkle with remaining 1 tsp. topping.
Bake until golden,20-30 mins.
Cool sl. before serving
