Ingredients
- 2 T butter
- 1 1/2 lbs carrots, sliced 1/2" on diagonal
- 2 scllions, thinly sliced
- 2 T fresh lime juice
- 1 t finely grated lime zest
- Salt & pepper
- 2 T chopped pecans
- 1 T chopped parsley
Preparation
Step 1
Melt butter in large skillet. Add carrots & scallions & cook, stirring occasionally, over mod heat til scallions are softened, @ 3 min.
Add lime juice & lime zest & season with salt & pepper. Cover skillet & cook carrots til crisp-tender, @ 5 min.
