Escarole and Beans

Ingredients

  • 1 15oz bag of chopped escarole
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 c reduced sodium chicken broth
  • 1 can cannelloni beans, drained and rinsed

Preparation

Step 1

Heat pot of water to boiling. Add escarole and let cook 1 minute. Drain well.
Heat oil in large skillet over medium heat. Add garlic and cook 1 minute. Add escarole to skillet, cook, stirring for 1 minute. Add chicken broth and beans. Cover pan and ket simmer for about 5 minutes
