Ingredients
- 1 med onion chopped
- 1 lg garlic clove, minced
- 2 Tblsp oil
- 2 tomatoes, chopped
- 1 jalapeno, minced or 1 4 oz can of chilis, draiined and chopped
- 1/2 lb med shrimp, shelled
- 3 Tblsp lime juice
- 2 Tblsp chopped cilantro
- Pinch of cumin and salt
- 1/2 avocado, mashed
- scallions
- sour cream
Preparation
Step 1
Wrap tortillas in foil and heat in 300 oven until warm.
Cook onion and garlic in oil until tender. Add tomatoes, chilis, ad shrimp. Cook til shrimp turn pink and opaque.
Fold in llime juice, cilantro and salt. Fill and fold into tortillas.
Serve with avocado, scallions and sour cream.
To fold:
Spoon some of the shrimp onto one quarter of a tortilla. Fold in half and then again in half, making a triangular package.
