Ingredients
- ENCHILADAS:
- 1 1/4 c. frozen corn, thawed
- 1 can chopped green chiles
- 1 c. fresh cilantro
- 1/3 c. heavy whipping cream
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3/4 lb. ground turkey
- 1/3 c. chopped onion
- 1 garlic clove, minced
- 1 tbsp. olive oil
- 3/4 c. salsa
- 1 tbsp. cornmeal
- 2 tsp. chili powder
- 1 12/ tsp. ground cumin
- 1 tsp. dried oregano
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 6 flour 8" tortillas, warmed
- 1 1/4 c. shredded Mexican cheese
- 1/4 c. sliced ripe olives
Preparation
Step 1
Place the 1st six ingredients in food processor; cover and pulse till blended.
In large skillet, cook turkey, onion, and garlic in oil over med. heat till not pink. Remove from heat, stir in salsa, cornmeal, and seasonings.
Spoon 1/3 c. turkey mix down center of each tortilla top w/ 2 tbsp. cheese. Roll up and place seamside down in greased 11x7 baking dish. Spoon corn mixture over top; sprinkle w/ olives and remaining cheeses.
Cover and bake at 350 for 30 mins. Uncover, bake 5-10 mins. more.
