Tender Beef N' Bean Stew

Ingredients

  • 1 lbs beef stew meat cut into 1in cubes
  • 2 cans kidney beans
  • 1 can diced tomatoes, undrained
  • 1 1/2 cups frozen corn
  • 1 cup hot water
  • 1 cup chopped onion
  • 2 celery ribs, chopped
  • 1 can chopped green chilies
  • 1 can sliced ripe olives drained
  • 2 tablespoon uncooked long grain rice
  • 1 tablespoons chili powder
  • 2 tsp beef bouillon
  • 1/4 tsp salt
  • 1 can tomato sauce
  • shredded cheddar cheese and sour cream

Preparation

Step 1

1. In a 5qt slow cooker, combine the first 13 ingredients. Cover and cook on low for 8-9 hours or until the beef is tender. Stir in the tomato sauce and cover and cook for 30 min or until heated through. Garnish with the cheese and sour cream if desired.
