Mini Spinach-Artichoke Frittatas

Ingredients

  • 6 eggs
  • 3/4 Cup parmesan cheese
  • 1/4 cup miracle whip
  • 1 Tbl Flour
  • 1 Tbl dijon mustard
  • 1/2 tsp black pepper
  • 14 oz artichoke hearts, drained, chopped
  • 10 oz frozen spinach, thawed, chopped and drained
  • 1/3 cup finely chopped red peppers

Preparation

Step 1

Heat oven to 350
Whisk first 5 ingredients until well blended. Add remaining ingredients and mix well.
Spoon 1 1/2 Tbl spinach mixture into each of 32 mini muffin cups sprayed with cooking spray.
Bake 15-18 min or until toothpick inserted comes out clean.
