Curried Butternut Squash Soup

Ingredients

  • 1 med. onion - chopped
  • 3 tblsp butter
  • 2 tsp red curry powder or curry powder
  • 2 tsp grated fresh ginger
  • 1/2 tsp salt
  • 1 14 oz chicken broth
  • 1 1/2 c. water
  • 1 1/2 lbs. butternut squash - 4 cups
  • 1 14 oz unsweetened coconut milk
  • 1/2 c. of half & half or lite cream
  • 1/3 c. fresh cilantro

Preparation

Step 1

Cook onion in butter

Stir in curry, ginger & salt - cook 30 seconds

Add in broth, water & squash - Bring to boil - reduce heat and cook 40 min

Blend ingredients in food processor

Stir in milk & cream

Top with cilantro
