Curried Butternut Squash Soup

Ingredients
- 1 med. onion - chopped
- 3 tblsp butter
- 2 tsp red curry powder or curry powder
- 2 tsp grated fresh ginger
- 1/2 tsp salt
- 1 14 oz chicken broth
- 1 1/2 c. water
- 1 1/2 lbs. butternut squash - 4 cups
- 1 14 oz unsweetened coconut milk
- 1/2 c. of half & half or lite cream
- 1/3 c. fresh cilantro

Preparation
Step 1
Cook onion in butter
Stir in curry, ginger & salt - cook 30 seconds
Add in broth, water & squash - Bring to boil - reduce heat and cook 40 min
Blend ingredients in food processor
Stir in milk & cream
Top with cilantro
