Pat's Rhubarb Torte

Ingredients

  • 1 c flour, 1 T brown sugar, 1/4 t salt, 1/2 c butter, 1 t vanilla – Mix and put in 9 x 9 pan. Bake 20-25 minutes at 350.
  • Filling: 1 1/2 c sugar, 2 T flour, 1/3 c cream, 1 1/2 c rhubarb, 3 egg yolks. Mix all filling ingredients together and cook until thick.
  • Top with meringue: 3 egg whites whipped, 1/2 t cream of tartar, 6 T sugar, added 1 T at a time. Spread over filling.

Bake 8-10 minutes at 400.
