No-Bake Chocolate Peanut Butter Banana Cake

  • 2 cups vegan chocolate chips
  • 1/2 cup "milk"
  • 1 1/2 cups nut butter
  • 1 12oz (300g) soft or silken tofu
  • 1 banana, sliced
  • 1 gingersnap or graham cracker crust
  • 1/2 tsp lemon juice

Preparation

Step 1

In a large double boiler, melt the chocolate chips and "milk" on medium heat, stirring until smooth and creamy. In a food processor, blend the nut butter and tofu together until smooth. Pour into melted chocolate and stir together well until smooth. Gentry stir in half of the banana slices and pour evenly into prepared crust. Smooth top with back of spoon and place remaining banana slices on top. Paint banana slices with a drop of lemon juice to pevent browning. Refrigerate for at least 2 hours before serving.
