Ingredients
- Bottom:
- 3 cups sweet potatoes ( 6-7 for large group, 3-4 for small group)
- 1/2 cup of sugar
- 1/2 cup butter
- 1/3 cup milk
- 2 eggs beaten
- 1 tsp. vanilla
- Topping:
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
- 1/3 cup melted butter
- (combine ingredients to spread over casserole mixture)
Preparation
Step 1
Boil potatoes with skin on until tender. Cool, peel, and mash. Combine potatoes, sugar, butter milk, eggs and vanilla. Stir well. Spoon into 9x13 dish (or smaller) and sprinkle with topping. Bake at 350 degrees for 25 minutes. Bake for 45 minutes if refrigerated prior to baking.
