Barbecued Butterflied leg of Lamb-Mom

Ingredients

  • Marinate in:
  • 1/2 leg of lamb butterflied
  • 1-2 large cloves of garlic pureed in a bowl with 1/2 tsp. salt, mash into a paste with wooden spoon
  • whisk in 2 Tbl dijon mustard, 1 Tbl soy sauce, 2 Tbl lemon juice, 1 1/2 tsp thyme, 1/4 olive oil
  • paint each side of the lamb with marinade and place in a shallow roasting pan, cover and refrigerate

Step 1

barbecue on grill, turning and basting often, or put under broiler for 10 minutes on each side- then barbecue before before ready to serve
