Escarole Salad with Apples and Pecans

Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp white-wine vinegar
  • 2 tsps Dijon mustard
  • coarse salt and ground pepper
  • 1 head escarole (1 lb.), cored, trimmed and torn into bite-size pieces
  • 1 apple, halved, cored and thinly sliced
  • 1/2 cup pecans, toasted

Preparation

Step 1

1.) In a large bowl, whisk together oil, vinegar, Dijon and 1 Tbsp water.

2.) Season with salt and pepper.

3.) Add escarole, apple and pecans.

4.) Toss and serve immediately.
