Escarole Salad with Apples and Pecans

Ingredients
- 1 Tbsp olive oil
- 1 Tbsp white-wine vinegar
- 2 tsps Dijon mustard
- coarse salt and ground pepper
- 1 head escarole (1 lb.), cored, trimmed and torn into bite-size pieces
- 1 apple, halved, cored and thinly sliced
- 1/2 cup pecans, toasted

Step 1
1.) In a large bowl, whisk together oil, vinegar, Dijon and 1 Tbsp water.
2.) Season with salt and pepper.
3.) Add escarole, apple and pecans.
4.) Toss and serve immediately.
