Fried Squid

  • 1.5 lbs medium squid
  • 3/4 cup whole wheat flour
  • 1.5 tea salt
  • .5 tea pepper
  • veggie oil
  • lemon wedges

Preparation

Step 1

1 clean squid cut and reserve tenticles and slice body in .5 in slices pat dry.

2 stir four, salt, pepper in medium bowl. working with a small handful of squid rings and tenticles at a time, toss squid in flour mixture. Make sure all surfaces are coated. arrange on wire rack to dry, after 15 of drying squid should be dry and firm. if not repeat process.

3 pour oil into deep heavy skillet about 3 in of oil over medium heat (375 degrees)using slotted spoon place squid into heated oil. fry for 60-90 seconds until golden brown. remove with slotted spoon onto paper towel.
work in batches. serve with lemon wedges.
