Lemon Vinaigrette

  • 1/4 cup fresh lemon juice
  • 1/2 tsp Dijon mustard
  • 1/2 tsp fine sea salt
  • 3/4 cup lemon olive oil or extra-virgin olive oil

Preparation

Step 1

Whisk together lemon juice, mustard, sea salt and 1/4 tsp pepper until salt has dissolved. Add oil in slow stream, whisking until emulsified. Use for roasted vegetables or salad.
