Pear Crisp

Ingredients

  • canola oil spray
  • 1/4 cup rolled oats
  • 1 tbsp walnuts
  • 3 tbsp whole wheat flour
  • 5 tbsp all-purpose flour
  • 2 1/2 tbsp packed light brown sugar
  • 1/8 tsp cinnamon
  • 1 tbsp + 2 tsp canola oil
  • 6 firm yet ripe pears, peeled (if desired), cored, and cubed into 1" pieces
  • 1/4 cup raisins
  • 1 tbsp freshly squeezed lemon juice
  • 2 tbsp granulated sugar
  • 1/8 tsp nutmeg
  • pinch of ground cloves

Preparation

Step 1

Preheat oven to 375F. Lightly coat an 8 or 9 inch round cake pan with canola oil spray.

In a food processor, pulse the oats and walnuts for 15 seconds. Add the whole wheat flour, 3 tbsp of all-purpose flour, brown sugar, and cinnamon. Process for 15 seconds. While the food processor is running, drizzle in the canola oil and process for 30 seconds, until the oil is completely integrated and the mixture resembles crumbs. Transfer the mixture to a bowl.

In another bowl, toss the pears with the raisins, lemon juice, granulated sugar, the remaining 2 tbsp all-purpose flour, nutmeg, and cloves. Spoon the pear mixture into the prepared cake pan and cover the top with the oat mixture, pressing down gently. Bake for 45 - 50 minutes, until the topping is brown and the pears are bubbling. Serve hot.
