Merry Cherry Chocolate Chunk Cookies

Ingredients

• 1 1/2 C flour
• 1 t baking soda
• 1 C unsalted butter, room temp.
• 3/4 C light brown sugar, packed
• 3/4 C sugar
• 1 large egg
• 1 t vanilla
• 1 1/2 C oats
• 1 1/2 C dried cherries
• 2 C bittersweet chocolate, coarsely chopped

Preparation

Step 1

Heat oven to 350. In large bowl, sift together flour and baking soda. In bowl of an electric mixer fitted with paddle attachment, cream butter and sugars on medium high speed until light and fluffy 2 - 3 minutes, scraping down sides of bowl once or twice. Add egg, mix on high speed. Add vanilla. Add flour mixture to egg mixture on low speed until well combined. Add oats, cherries and chocolate. Mix. Spoon heaping tablespoon of dough onto baking sheet spacing 2 inches apart. Bake cookies until golden brown, about 10 minutes.
