Two Mushroom and Bean Chili

Ingredients

  • 2 T Veg Oil
  • 1 cup chopped onion
  • 1 T minced onion
  • 2 T chili powder
  • 1 t ground cumin
  • 1 1/2 pounds fresh white mushrooms, sliced
  • 8 oz fresh shitake mushrooms, sliced (2 1/2 c)
  • 14.5 oz can stewed tomatoes
  • 19 oz can white kidney beans, rinsed & drained
  • 1/2 c sliced ripe olives
  • 1/2 c water (or broth)

Preparation

Step 1

In large saucepan, heat oil until hot. Add onion & garlic. Cook, stirring frequently until onion is tender, about 5 min.

Stir in chili powder & cumin; cook until fragrant, about 30 seconds. Add mushrooms, cook, stirring ocasionally, until mushrooms are crisp-tender, about 6-8 min. Add tomatoes, beans, olives & 1/2 cup water. Simmer uncovered about 10 minutes to blend flavors.

Serve with tortillas, garnish with shredded lettuce, diced fresh tomatoes and shredded cheddar cheese.
