Ingredients

  • 1 sheet heavy aluminum foil
  • 1 to 1 1/3 pounds salmon fillet, skin on
  • 1/3 cup white wine
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon olive oil
  • 2 teaspoons dried herb seasoning blend (McCormick grill mates Salmon Seasoning, Paul Prudhommes's Seafood Magic
  • 2 teaspoons bottled minced garlic, optional
  • 4 lemon slices, optional garnish

Preparation

Step 1

1. Turn on gas grill to medium high (about 400 degrees F)

2. Place a sheet of foil on a cookie sheet that's bout 2 inches larger than the salmon on all sides. Place fillet skin side down in the middle of foil. Fold up the edges, crimping to form a 1 inch high lip all the way around the fish.

3. Mix wine and Worcestershire in a 1 cup measure. Pour over fish. Drizzle the oil, and then sprinkle seasoning evenly over fish. ( Sprinkle on monced garlic, if desires.)

4. Slide fish (in foil) from cookie sheet onto grill. Cook until the fish is opaqu throughout, about 10 minutes, or to desired doneness. Remove from the grill. To seve, cut into portions. To remove skin, slide a metal spatula between salmon and skin, and lift fish away from skin. (skin often sticks to foil making it easier)

5. Serve garnished with lemon slices, if desired.
