Ginger Lemon Delights

Ingredients

  • 1 pouch Betty Crocker sugar cookie mix
  • 1/2 C shortening
  • 1/4 C light molasses
  • 1 T ground ginger
  • 1 1/4 t cinnamon
  • 1 t ground cloves
  • 1 egg
  • Glaze and Topping
  • 1 C powdered sugar
  • 1 t grated lemon peel
  • 4 t lemon juice
  • 1/4 C finely chopped crystallized ginger

Preparation

Step 1

Heat oven to 375. In large bowl, stir cookie ingredients until very soft dough forms (dough will be sticky).

On ungreased cookie sheet, drop dough with 1 tablespoon size cookie scoop or by tablespoonfuls about 2 inches apart.

Bake 8 to 10 minutes or until edges are light golden brown. Cool 2 minutes; removed from cookie sheets to cooling racks. Cool completely about 30 minutes.

In small bowl, stir powdered sugar, lemon peel and lemon juice until smooth. Spread on cookies and sprinkle with crystallized ginger.
