Ingredients
- 2 Tbsp fresh lemon juice
- 2 Tbsp olive oil
- salt and ground black pepper
- 3 5 oz cans solid white tuna, drained
- 1/2 small red onion, thinly sliced
- 1/2 cup grape tomatoes, halved
- 1/4 cup pitted olives, halved
- 1/4 cup flat leaf parsley, roughly chopped
- 4 small or 2 large pitas, halved crosswise
Preparation
Step 1
1. In a large bowl, whisk together the lemon juice, olive oil, and 1/4 tsp each salt and pepper.
2. Add tuna, onion, tomatoes, olives and parsley and gently toss to combine.
3. Open pita halves and fill with tuna salad.
