Herbed Roast chicken with potato and carrots

Ingredients

  • Preheat oven to 425
  • 1 cube softened butter
  • kosher salt
  • lemon juice
  • parsley
  • Mix softened butter with salt and juice.
  • Loosen skin on chicken and smear butter mixture under skin.
  • Toss halfed red skin potatoes and carrots in olive oil. place in roasting pan that has been sprayed with Pam
  • fill reservoir with white wine
  • Truss chicken and place on suspension arm breast side up
  • cook for 30 minutes. Rotate 180 degrees.
  • cook until 170 degrees.
