Sweet Corn Soup with Bacon and Shrimp

Ingredients

  • 3 Tbls butter
  • 1/2 chopped onions
  • 4 cups fresh corn
  • 3 cups chicken stock
  • sea salt to taste
  • 1/2 cup heavy cream
  • spring fresh thyme
  • 1 bay leaf
  • pepper
  • bacon, cooked & crumbled
  • shrimp, cleaned

Preparation

Step 1

butter, add onions translucent. corn, chicken stock, salt and cream
tie thyme & peppercorns in a cheese cloth, simmer 25 mins.
pour 1/2 pot in blender, puree.
cook bacon until done, remove (crumble), put shrimp into drippings and cook until pink. add to soup
