Red potato bites

Ingredients

  • 12 . Small red potato
  • 1 T olive oil
  • 4 oz. Cream cheese
  • 1/2 . C cheddar cheese
  • 1/2 . C swiss
  • 8 . Oz bacon crumbled
  • 1/2 . C. Green onions
  • 1 . t. Thyme

Preparation

Step 1

Rub potatoes in oil. Bake at 400 form45 min. Cool, cut in half, scoop of flesh, leave 1/4 in shell.cut smaal slice from bottom to level.

Add cream cheese, cheddar, swiss, bacon, onions, thyme, potato pulp and mix.spoon into shells. Broil 6 inches from broiler for 3-5 min,

Garnish with green onions.
