Bread: Buttermilk Cornbread

Ingredients

  • 1 1/4 c all purpose flour
  • 1 cup plus 3 T plain white cornmeal
  • 1 T baking powder
  • 1 tsp salt
  • 1/4 c butter melted
  • 2 large eggs
  • 1 cup buttermilk

Preparation

Step 1

Preheat oven to 400. Lightly grease a 8 inch skillet and heat in oven 5 minutes. Meanwhile whisk together first 4 ingredients. Whisk in butter. Add eggs and buttermilk, beat till smooth. Pour batter into skillet. Bake at 400' for 30-33 minutes or till golden brown.
