Pat's Blueberry Oat Muffin

Ingredients

  • 1 cup oats
  • 1 egg (beaten)
  • 1 cup buttermilk
  • 1/4 cup butter (melted)
  • 1 cup flour
  • 1 cup blueberries (thawed, drained)
  • 1 tsp baking powder
  • 3/4 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Preparation

Step 1

Preheat 400 degree - Bake 15 - 22 minutes

Combine oats and buttermilk in a bowl. Let stand.

Meanwhile combine flour, baking powder, baking soda, salt and brown sugar. Stir well to blend. Add egg and butter to oat mixture. Mix well. Add oat mix all at once to dry ingredients.

Stir until all is just combined.

Gently fold in blueberries.

Fill muffin cup to 3/4 cup full.
