Ingredients
- 1 tablespoon Vegetable oil
- 1 pound uncooked shrimp
- 1 small onion chopped
- 1 chipotle pepper in adobe, chopped
- 1/2 teaspoon Papa El's original Seasoning
- 1/2 cup chunky peanut butter
- 1 cup hot water
- 1 bouillon cube crumbled(chicken)
- 2 tablespoons chopped Cilantro
Preparation
Step 1
Heat oil in 12 inch skillet over medium high heat and cook shrimp, turning once, 3 minutes or until shrimp turn oink. Remove and keep warm.
Cook onion in same skillet over medium heat, stirring occasionally, 3 minutes or until golden brown. Stir in chipotle pepper and Papa El's original and cook 1 minute. Stir in peanut butter and blend with hot water and bouillon cube, then simmer 2 minutes. Return shrimp to skillet and heat through. Stir in cilantro. Serve, if desired with hot cooked rice and garnish with chopped cilantro.
