Ingredients
- Sift together:
- 3 Eggs
- 1 cup Sugar
- 2/3 cup Pumpkin
- 1 tsp Lemon Juice
- 3/4 cup Flour
- 1 tsp Baking Powder
- 2 tsp Cinnamon
- 1 tsp Ginger
- 1/2 tsp Nutmeg
- 1/2 tsp Salt
Preparation
Step 1
Beat eggs on high for 5 minutes then add sugar, pumpkin, and lemon juice. Then blend in dry ingredients and spread onto a greased and floured jelly roll pan - 15x10x1.
Bake at 375 degrees for 12-15 minutes.
Turn out on a dish towel that has been covered with powdered sugar. Roll up like a jelly roll until completely cool.
Unroll and spread on filling and roll
Filling - Beat until smooth
1 cup Powdered Sugar
4 tbs Butter
2 - 3 oz Cream Cheese
1/2 tsp Vanilla
