Creamed Spinach

Ingredients

  • 4 pounds fresh spinach, steamed
  • 1/4 cup butter
  • 1 1/2 tablespoons all-purpose flour
  • 2 cups heavy whipping cream
  • 1 (9-ounce) package fontina cheese, shredded
  • 1 (8-ounce) package cream cheese, softened
  • 1 teaspoon salt
  • 1/2 teaspoon ground red pepper

Preparation

Step 1

1.Drain spinach well, squeezing out excess water. Place spinach in a large bowl; set aside.
2.In a large skillet, melt butter over medium heat. Add flour; cook, stirring constantly, for 2 minutes. Gradually stir in cream; bring to a boil, reduce heat, and simmer for 4 minutes, stirring constantly, or until thickened. Add cheeses, salt, and red pepper. Stir until cheeses are melted and smooth. Pour cheese mixture over spinach, stirring to combine. Serve immediately.
